Carlo's Kitchen is home for your favorite traditional Italian food. Here is a place where friends and Vivande customers can explore not only Southern Italian foods, but many of the important other regional cuisines and products, some of which are unique to very specific locales, difficult to find and nearly impossible to replicate. I want to personally invite friends and Vivande customers to explore my Italian Pantry -- where you'll find high quality and fine foods from all over Italy.
By now, most of my customers appreciate my enthusiasm for Southern Italian cooking and authentic Sicilian dishes. My passion for Sicily encapsulates my very essence of life, and I have channeled this zeal through our ever-bustling restaurant. At Vivande Porta Via in San Francisco we feature many regional favorites of my beloved Sicily and specialize in creating many other dishes and entrees distinctive of regional Italian cuisine. My wife, Lisa, and I have been operating the European-style eatery for 25 years. For those who cannot personally experience Vivande Porta Via, I heartily endorse and encourage my friends to experiment with their favorite traditional Italian dishes. With just a bit of care and attention, you can replicate many of my favorite Italian dishes right in your own kitchen.
Allow me to provide cooking tips in the style of cooking that is common throughout Southern Italy. These are the same ideas I use everyday in my restaurant kitchen and that I provide my culinary students.
You can prepare your favorite Southern Italian recipes, perhaps using my signature hand-carved wooden kitchen tools or employing other Sicilian specialties you can discover here and elsewhere.
You will come to know and appreciate both subtle and major differences in Italian cooking. Indeed, Sicilian cooking and Sicilian food is very different from areas north of Naples and Rome. Throughout Southern Italy, foods reflect the gifts from the earth and sea complemented by delicious breads and exotic desserts, some brought by Arabs centuries earlier.
Those who already know us well understand that I am partial toward Sicilian cuisine. But we draw on the exclusive flavors and cooking qualities of other regions to create a menu that is distinctively "Vivande." We often find extraordinary items from both Northern and Southern Italy and provide these specialties to our loyal friends and customers.
